There was a very strange Thai restaurant where we used to go very often. It was located in the underground of an office building on the shabby side of the town. The inside was spacious, dark and decorated with red, which could be a fancy bar if they did not have this old stereotypical Asian decor. The background music was the 90s/00s pop – such as Backstreet Boys. Although there were not many customers around every time we visited, there was “reserved” sign on the good tables. They always wanted us to have a small table in the crappiest spot, but if we asked, they were happy to remove the reserved sign and let us have a table.
And…, their food was delicious.
Their food was modern style Thai cuisine by keeping its authenticity. They served their dishes as “tapas style”, so that we could share and try different things. One of our favourites was their Thai-Style Oyster Shooters. It was fresh, spicy, sweet and exciting, in short, really tasty. My husband and I always ordered one each which came with 3 oyster shooters, and never shared it.
When my husband suggested to serve Oyster Shooters as a welcome drink at the last Christmas, I knew I had to make my own version of it. I had already had an idea for the mixture – utilising my Thai Salad Dressing. In fact, I could have already imagined how delicious it would be before making it. My concern was how well it would be received. I was planing to make it punchy and spicy as it should be. I was just not sure if everybody would be ready for it.
Therefore, I was so relieved and happy when I saw everyone enjoying it, including one of our youngest guests! YEY! (FYI – the non-alcoholic version was served for him – see the bottom for the version).
Last week we had a chance to get some fresh Coffin Bay oysters, so I was finally able to make it again and write down the measurements.
This is my Thai-Style Oyster Shooters. They are spicy, punchy and funky, which I hope bring a bit of joy and excitement into your life…
